A delicious side dish packed full of flavor!

Ingredients:

1 Cup Genesis Grains Rice
1 Small Can Ortega Chiles, diced
1/2 lb Jack Cheese
2 Cups Sour Cream
4 Tbs Butter
Salt & Pepper to taste

Instructions:

Cook rice according to directions on package. To the cooked rice add chiles, grated cheese, and sour cream. Add salt & pepper. Butter casserole, put rice mixture in casserole, sprinkle cheese on top. Dot with butter.

Bake at 350 degrees for 30 minutes

Microwave instructions: 8 minutes on full power, covered with plastic wrap

Genesis Grains medium CalRose rice and italian sausage.
Ingredients:
  • 2  tsp Olive Oil
  • 6  oz Italian sausage, sliced
  • 1  medium onion, diced
  • 1/2  EACH red AND green bell peppers, seeded and diced
  • 1 small tomato, seeded and diced
  • 1 tspTomato Paste
  • 3 coves garlic. minced
  • 3 cups cooked Genesis Grains medium CalRose rice
  • Salt and Pepper
Instructions:
  1. In deep skillet, heat olive oil over medium heat. Add sausage and cook until no longer pink; drain. add onion, bell peppers and tomato; cook until vegetables are tender. Add tomato paste and garlic; stir to coat.
  2. Add rice previously prepared rice; stir to coat. Cover and simmer until eated throught, about 5 minutes. Remove from heat; season to taste. Fluff rice with fork before serving.

Rice for every occasion. Grainy and light, the scallions add a fresh taste while the roast cashew nuts give it a crisp, crunchy texture.

Ingredients:
  • 1 Onion
  • 4 tbsp Butter
  • 1/4 Cup Genesis Grains Medium Grain Rice
  • 1 1/2 Cups Water
  • 1 3/4 oz Cashews
  • 2 Scallions
  • 1/4 tsp Salt
  • 1/4 tsp Pepper
Instructions:
  1. Mince onion and fry in 2 tbsp butter until transparent. Now add 1/4 medium-grain rice stir and fry for 30 seconds, then add 1 1/2 cups water. Season with salt and bring to a boil. Allow to boil fiercely for 1 minute then reduce the heat and simmer for 20 minutes over low heat.
  2. Dry roast 1 3/4 oz cashew nuts in pan and mince coarsley
  3. Wash and prepare 2 scallions and cut into fine rings. Fry in 2 tbsp butter, season with salt and pepper, and stir into rice.
